The base of this polenta is pre-cooked corn flour, chosen to ensure quick and uncomplicated preparation. The pre-cooked cornmeal is known for its creamy texture and rustic flavor, which pairs beautifully with the black summer truffle.
1% dried black summer truffle, coming from the Tuber aestivum Vitt., is the secret of this dish. Its enveloping aroma and elegance spread delicately into the polenta, creating a symphony of flavors that capture the attention of diners.
To prepare this extraordinary polenta, we recommend pouring the flour into 1.5 liters of cold, already salted water. Bring the mixture to the boil, stirring with a whisk for about 5/6 minutes, always in the same direction. This will allow the polenta to reach its desired consistency, creamy and enveloping.
