Hummus chickpea with truffles

Ingredients for 4 people

  • 300 grams of bio dried chickpeas
  • 50 grams of tahina
  • juice of one lemon
  • 2 cloves garlic
  • 50 g extra virgin olive oil
  • Black truffle sauce T & C

  1. Foreseeing the dried chickpeas, this recipe should be initiated well in advance. In fact, you need to first soak the chickpeas for 12 hours (changing the water from time to time). After this time, drain, sciacquali well under running water and cuocili for about 2 hours, until they are soft (remember to set aside a glass of boiling water, it could be used);
  2. Now you need to blend the chickpeas in a food processor, add two cloves of garlic, extra virgin olive oil, salt, lemon juice and tahini; consistency to obtain must be very creamy and without lumps (if helped with the cooking water of the chickpeas that you have kept aside);
  3. At this point you do not just have to add our black truffle sauce and some toasted sesame seeds for garnish. Accompanying the hummus with what you like, from classic breadsticks of seasonal vegetables.
